Pancake Day 2021, a Sweet Day We're All Overdue

Pancakes are one of the easiest, most simple meals to make, and there’s really no reason to over complicate how they’re made. To make 6 pancakes, follow these simple steps and you’ll have a tasty dish served in a matter of minutes.

STEP 1

Put 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter.

STEP 2

Set a medium frying pan over a medium heat and carefully wipe it with some oiled kitchen paper.

STEP 3

When hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go.

Toppings
Now with our famous pancakes, we add a side tub of fruit compote, in which you can add them however you please. Compote is a simple fruit sauce made with pieces of fresh fruit and some sugar, or in our case honey, cooked briefly on the stove. The best thing about compote, is that it can last up to 2 weeks after being made, this is mainly due to it having sugar within it which acts as a preservative. To make a delightful fruit compote, add the fruits of your choice (we use a mixture of berries such as strawberries, blueberries and raspberries!), add a few squeezes of honey into the mix (the desired amount comes down to how sweet you want it!), and then simply boil in a medium to warm pan. Once the fruit has melted down and mixed with the honey, stir to ensure they are properly mixed, then either allow to cool or apply to your pancakes!

Want to know a little secret though? We add little chunks of chocolate chip and banana to our pancake mixture before adding them to the pan, to add that little bit of additional taste!
